Our matured sheep ricotta, in flattened round shapes of about 2.5 kg / 3.00 kg. It is made from the sheep milk whey of Sardinian pastures, it is cold-dried and matured to obtain the perfect grating consistency. The paste is white, compact and slightly crumbly.
The flavour is intense and sapid, typical of ricotta but enhanced by aging. It is a ricotta to be grated, perfect in cuisine for many tasty traditional recipes, as well as for excellent pasta alla Norma.

Aged and salted sheep's milk ricotta is pressed, salted by hand and naturally seasoned. It has a white and consistent texture, its shape is round and flat like classic pecorino cheeses.
The salted ricotta can be kept in the fridge for a few days. To increase its durability, we recommend wrapping it on aluminum foil and placing it on a flat surface. However, remember to always follow the directions on the labels.
