BAVARESE WITH BLACKBERRY SAUCE AND CHEESE SPREAD
Ingredients
4 people- Whole milk 250 ml
- Fresh Spreadable Sheep Cheese 125 g
- Egg yolks 2
- Pecorino Romano PDO 80 g
- Isinglass 3 sheets
- Blackberries and berries 200 g
- Sugar 1 tablespoon
Method
The sauce with blackberries and berries
In a small pot, cook blackberries and berries, a tablespoon of sugar and a small cup of water. Cook until it reaches a soft but tied consistency.
Bavarese
On one hand, grate the pecorino cheese and soak the isinglass in the water and then squeeze it well before using it.
Combine the egg yolks with Pecorino Romano and add the milk little by little.
Pour the mixture with cheese into a small saucepan and let it thicken slowly, add the soaked and squeezed isinglass.
Remove from the stove and add Spreadable Sheep Cheese, then mix well.
Pour the mixture of cheese Bavarese into moulds and put in the fridge for a few hours until it reaches the ideal consistency.
Once you have the right consistency, remove the moulds from the fridge, add the sauce and serve the Bavarese with berries.
