CHEESE SOUFFLÉ WITH BRIGANTE

MEDIUM | 45 minutes

Ingredients

4 people
  • Milk 1 glass
  • Flour 40 g
  • Butter 30 g
  • Brigante 100 g
  • Eggs 2

Method

In a small pot, put half of the butter and melt it with some flour, add the milk and amalgamate well.

In the meantime, take the eggs and separate the yolks from the whites, and beat the egg whites until stiff.

Once the mixture has cooled, add the egg yolks, Brigante cut into cubes and whipped egg whites.

Butter some moulds and add the mixture up to about 3/4 of the capacity.

Bake at 200 degrees for about 15/20 minutes, when the soufflés are ready, remove them from the oven.

To accompany the soufflés, prepare a quick cheese sauce, heat the remaining butter and the cheese in the same small pot.

Plate up and put the cheese sauce on the bottom of the plate, then lay the soufflés down above. Alternatively, if you prefer a sweet taste, you can accompany them with a homemade Orange marmalade.
