FRANCESINA AND RICOTTA MUSTIA

Ingredients for 4 sandwiches
  • Spelt bread rolls with seeds 4
  • Sliced ​​smoked salmon 250 g
  • Mixed salad 80 g
  • Courgettes 2
  • Extra virgin olive oil to taste
  • Salt to taste
For the mayonnaise with ricotta mustia and dill
  • Egg yolks 2
  • Extra virgin olive oil 250 ml
  • White vinegar 3 g
  • Lemon 1
  • Dill to taste
  • Salt to taste
  • Pepper as needed
  • Smoked Ricotta Mustia 100 g

Method

Mince the dill very finely, mix it with ricotta, add the other ingredients for the mayonnaise and work them well until you get a creamy mixture.

Wash, blunt and cut the courgettes into thin slivers lengthwise, then grill them on a hot ribbed cast iron plate with a little oil and salt.

Cut the bread rolls in half, heat them on the grill or in the oven for a few minutes.

Spread the Ricotta Mustia mayonnaise on the lower half, add a few slices of grilled courgettes, salmon and mixed salad.
