Pancakes are excellent for a snack or breakfast, to be served with maple syrup, chocolate or red berries. The recipe is even easier and quicker to prepare with the Thermomix, and more delicious and nutritious with ricotta.   • Sheep ricotta 100 gr
  • Donkey 40 g
  • Granulated sugar 30 g
  • Type 0 Flour 150 g
  • Whole milk 100 grams
  • Medium eggs 2
  • Baking powder in sachet 1/2 sachet

Method

Place 40 g of butter in the mixing bowl and melt for 2 min. at 60°, Speed 1.

Add 30 g of granulated sugar and 150 g of type 0 flour.

Then add 100 g of whole milk, 2 medium eggs and 8 g of baking powder (½ sachet).

Finally, add 100 g of Pinna Formaggi sheep ricotta and mix 10 Sec. Speed 6.

Optionally, you can grease the pancake pan with a little butter. Then spoon the pancake batter onto the pan and cook over medium-low heat.

Cook the pancakes for about 2-3 minutes per side. Flip with a spatula when the base is golden to cook them on both sides. Continue until the batter is finished.

As they are ready, set them aside without overlapping them, so they will remain nice and soft. Before bringing them to the table, however, you can also stack them and serve them with maple syrup, Nutella, jam or strawberry sauce, whipped cream... is there perhaps a limit to imagination?

If there are any leftovers, you can store them in the refrigerator in an airtight container for up to 3 days. You can also freeze them.

How long do homemade pancakes keep?

We can store already cooked pancakes in the refrigerator. Let them cool completely first, then place them in an airtight container. Alternatively we can use a plate or bowl, covering them with cling film. They can also be frozen, we recommend separating one pancake from another with sheets of baking paper, otherwise it will be difficult to separate them. The pancakes can stay in the freezer for about 2 months, it's best not to go any longer.

It seems that the pancake recipe was born in ancient Greece, well before the year 0 between Athens and Sparta. The association with the United States is later. After having assimilated the Greek recipe, the Americans proposed an innovation to the recipe: the addition of yeast. From this moment on, pancakes will be the symbolic dish of the USA.
