TUNA TARTARE WITH WATERMELON AND CHEESE SPREAD
Ingredients
4 people- Very fresh red tuna 360 g
- Fresh Spreadable Sheep Cheese 160 g
- Extra virgin olive oil 4 tablespoons
- Thyme 3 leaflets
- Watermelon one half
- Mixed salad 1 tuft
Method

As for fresh tuna, you can choose to buy it already chilled or to do the process at home. If you choose the second option, bring the tuna to a temperature of around -22° from the day before and bring it back to a temperature of around 15° at the time of preparation.
The tartare

With a sharp knife cut the tuna into small cubes.

Put the tuna in a bowl and add oil, salt and a few drops of orange.
Compose the dish

Slice the watermelon, use each slice as a base for the tuna tartare.

Add the Spreadable Sheep Cheese and a tuft of fresh vegetables to the tartare.
