SPAGHETTI WITH PUMPKIN CREAM AND PECORINO ROMANO CUBES

Ingredients

4 people
  • Spaghetti 280 g
  • Cleaned pumpkin 200 g
  • Pecorino Romano PDO 70 g
  • Extra virgin olive oil to taste
  • Salt to taste
  • Pepper as needed

Method

Boil plenty of lightly salted water and cook the spaghetti.

Meanwhile, cube the pumpkin and brown it with a tablespoon of oil for 10 minutes over low heat.

Blend the pumpkin and make a creamy sauce, then pour it into a concave pan.

Drain the pasta and keep the cooking water.

Put the pasta in the pan with pumpkin cream and mix well, with the help of a little cooking water that you have set aside.

Finally add the Pecorino Romano PDO cubes and a sprinkle of pepper.

Plate up and serve the spaghetti with pumpkin cream and Pecorino Romano.
