Brigante is our most famous and most loved cheese. We are so proud of it that we have also prepared it in the goat milk version and in many spicy versions: with black pepper, with saffron and pepper, with chilli pepper, with truffle. Its flavour goes well with that of spices, giving life to surprising cheeses: delicious to taste alone, perfect for adding flavour to salads or for trying new ideas of bread rolls and sandwiches. We want everyone to be able to taste our Brigante: for this we also prepare it in the lactose-free version which keeps all its taste and freshness, but facilitates its digestion to the intolerants. Each wheel of Brigante is born only from milk of Sardinian flocks and from the wisdom of tradition but with our own recipe. It matures in just 25 days. In this way it preserves the taste of the milk with a perfect balance between flavour and freshness.
