FRESH CHEESES Our fresh cheeses are made only from sheep or goat milk from Sardinian flocks. They mature in a few days and thus preserve all the flavour of the milk, the scent that comes from the aromatic herbs of the pastures. They range from the traditional pecorino cheese to our Brigante, in all its different versions, up to the delicious goat cheeses. Among them you can also find lactose-free cheeses, because we want everyone to be able to enjoy their freshness and flavour. They have a light, soft and delicate paste, often with slight holes. Their flavours are delicious to be enjoyed on any occasion: to accompany salads or for a healthy and tasty snack or also to prepare so many different recipes.
